Pancakes
Pancake preparation can be quick and easy if you measure out the dry ingredients the night before. Then you can simply add egg, oil and milk in the morning.

1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1/2 teaspoon salt
3 tablespoons of sugar

1 egg, well beaten
3 tablespoons oil or melted shortening
1 cup (about) milk

Mix flour with baking powder, salt, and sugar in a bowl. In another bowl combine egg, oil, and milk. Add to flour and stir just enough to moisten the dry ingredients. Do not Beat.

Heat griddle so that drops of water bounce off it, or to 400 degrees. Swipe some oil across griddle, and use a 1/4 cup measure full of pancake batter to make each pancake. Cook until tops begin to rise and bubbles dot surface; turn and brown on other side, about 3 minutes altogether. Makes about 12 4 inch pancakes.
